Bluewater Grill moved to a new location this past summer and they already have more plans in the works. According to a building permit filed with the City of Phoenix, the restaurant is converting a 530 square-foot private dining room on the property into a brand new sushi bar

Bluewater Grill was founded by Rick Staunton and Jim Ulcickas in Newport Beach, CA in 1996. Jeff Martineau, partner of Bluewater Grill, has been the General Manager of the Phoenix location for over a decade. Martineau says that if all permits get approved in time, they plan to debut the sushi bar within a month and a half.

For now, they are working out the space’s motif, which will include a seaweed-style wallpaper and an oyster chandelier. There will be a display case at the bar, where up to 12 guests can sit and watch the sushi chefs do their magic. There will also be table seating on either side of the bar.

While their current sushi menu is already quite extensive, the dedicated sushi bar space means there’s a possibility that we may see an expansion with new roll flavors and other sushi offerings.  Until then, stay tuned to Bluewater’s Instagram and website for more details.
