Aaron and Jared Pool, the brothers behind Gadzooks Enchiladas and Soup, have expanded their brand over the last eight years since initially opening in 2013. Now, they’re in the works to develop two new establishments to Park Central: The Green Woodpecker and Poolboy.
The Green Woodpecker, a neighborhood taproom, will serve traditional bar snacks with a “Mexican twist.” It was named after a former flowershop in Park Central and will pay homage with flowers and plants inside and trees on the outdoor patio.
They will also serve beer from another brother, Drew, who owns Wren House Brewing.
This unit is set to take place of the former Starbucks at 3110 North Central. They are hoping this bar will be open by the end of 2021.
The other, Poolboy, is set to move in across from the shopping center and be something of a Gadzooks spinoff. Gadzooks might be known for their enchiladas, but Poolboy is looking to put a focus on tacos. There will be no inside seating for this particular restaurant, but diners can enjoy their meals on a large patio outside.
This idea spawned after Gadzooks took some “Festival Tacos” to the Arizona Taco Festival and won. You can still try the tacos for yourself at the restaurant.
Poolboy is a few steps behind the progress on The Green Woodpecker and is hoping to open by spring 2022.
