Now, they’re prepared to take on their second location at the Queen Creek Botanical Gardens at 25002 S 206th Street.

The owner, Clay Caldwell, initially retired out of the restaurant business and sold his former “Waldo’s BBQ” in 2014. A trip to Texas changed his mind when, according to the website, he says, “It’s just that what they’re doing in Texas is exceptional.”

Whatever that is must be something right. Not only did the BBQ flavors of Texas coax Clay out of retirement, what they’re doing at Caldwell County BBQ has also been hailed the best barbecue in the East Valley.

Not a bad accomplishment for someone who retired after 20 years in the business.

The second restaurant will join several others in the new restaurant, market, and juice bar building in the gardens set to open in the fall of 2022.

What Now Phoenix reached out to the co-owner, Susan Caldwell, for more information on the second opening, but has yet to receive an official response, but they did post a sneak-peak on their Instagram.
