Chef Fabio Ceschetti is preparing to open a new restaurant called Fabio On Fire Gelateria & Panini in Peoria, located at 24775 N. Lake Pleasant Pkwy. #101

The sister restaurant of Fabio on Fire will move to the Four Corners shopping center, near the southeast corner of Lake Pleasant Parkway and Happy Valley Road, according to Mouth by Southwest. This new venture, featuring paninis and their house-made gelato, will open in either Spring or Summer 2023. Fabio On Fire Gelateria & Panini will be adjacent to Club Pilates and across the parking lot from the Aldi grocery store. Ceschetti first opened Fabio on Fire in 2017.

“What started as a dream for Fabio Ceschetti has been quite a journey so far, starting with farmers markets to private caterings to special events (like the Italian Festival with thousands of people) to Pizzeria Italiana (8275 W. Lake Pleasant Parkway, Suite 101) to his latest concept with panini (authentic Italian sandwiches warmed in the wood-fired oven) and Gelateria (our house-made gelato) in our newest and second location,” according to the company’s Facebook page.

Chef Ceschetti has deep roots in Italy and comes from a family of restaurateurs. The well-known chef worked his way through the ranks of his family’s restaurant, Il Barcantonio, from dishwasher to pizzaiolo to head chef. Now that he has his own line of restaurants, he takes pride in serving delicious authentic Italian pizzas, bread, desserts & cuisine made from only the freshest, high-quality ingredients. All the produce used is from local growers who are committed to quality, organic living, and environmentally friendly farming.
