EAT By Stacey Weber is opening a new restaurant in McCormick Ranch called Amelia’s by EAT Restaurant + Marketplace, located at 8240 N Hayden Rd. Unit B Ste. 106.

The new restaurant will move into The Village at Hayden shopping mall in May 2023, according to the company’s social media. Amelia’s is inspired and named after Stacey’s grandmother, yet built on the foundation of bringing people together with food. Each dish at Amelia’s will be delivered with the purpose of simplicity. The new restaurant will feature counter service all-day menu, including BYOB (build your own board), nosh board, scratch-made cocktails, coffee, grab-and-go food, beverages, and various market items.

“Customers can expect to see items on the menu that have become popular through our EAT catering and online meal services over the years,” according to a company representative. “Things that many people know and love, such as breakfast burritos, breakfast sandwiches, gluten-free pot pies, quiche lorraine, chicken salad, egg salad, avocado toast, and much more. Many of our signature salads such as roasted beet salad, greek falafel salad, and caesar. We are additionally offering sandwiches, fresh in-house rotisserie chicken every day, and grab-and-go snacks.”

Considering how many independent eateries are in the area, this will be a perfect landing space for the restaurant. Other nearby eateries include Campo Italian Bistro & Bar and Collins Bros. Chophouse. When Amelia’s opens, it will provide the area with even more healthy, flavorful, fresh food brought to you by Stacey Weber. FYI, her location at Tatum & Shea is pickup only for online orders…no place to eat.
