Their flagship, Gibsons Bar & Steakhouse, is an iconic Chicago restaurant popular for their impressive cuts of meat and large slices of cake. The original restaurant was founded in 1989. Over the years they’ve expanded their portfolio to include a myriad of concepts including Hugo’s Frog Bar & Fish House, LUXBAR, Quartino Ristorante & Wine Bar, and many more.

“We’re looking at new locations at a number of markets,” Gibsons co-founder and chairman Steve Lombardo tells Eater. He adds that his restaurants are poised to thrive in anywhere in the U.S., which is why they are currently scouting the perfect locations throughout the country. Every new restaurant will be adapted to its local market while maintaining Gibson’s hallmarks.

Outside of Illinois, Gibson’s successfully runs The Boathouse in Orlando and a Hugo’s location in Philadelphia. Following this announcement, the group’s first project will be a Quartino outpost in suburban Dallas. An Arizona restaurant is sure to follow soon, though Lombardo has not disclosed where or which restaurant will land in the Valley first. Check out their website for more information.
