Be on the lookout for Gypsy Cup’s flagship brick-and-mortar to open in downtown Gilbert later this summer. The first permanent location for the local coffee trailer will offer an “elevated European bakery, café, coffee and cocktail bar.”

The bakery has plans to develop a creative, modern edge to European pastries. “In short, it’s a WHOLE vibe. A place you walk into and experience. A little euro excursion if you will…… Grab a coffee, pastry and a light bite. Sip a cocktail, glass of wine and nosh a bit,” shares the café’s Instagram.

What Now Phoenix is happy to report the café is making progress towards their goal of opening this summer. The café has filed a liquor license application with the Town of Gilbert for 350 N Gilbert Rd, Suite 101. The license is currently pending.

Prior to settling down, Gypsy Cup has existed as a full-service traveling café. You might have seen it at local events, weddings, festivals, and markets around town. The café is co-owned by Linsay and Neil Smith. “I hope to make Gypsy Cup a leader in Phoenix coffee culture, expand our product lines and create cutting edge coffee concepts around the valley,” Linsay Smith shares on the company’s website.
