The traveling café’s permanent location will be in downtown Gilbert.

Earlier this year, we announced that Gypsy Cup was working on a brick-and-mortar location. While this fact remains true, the correct location is actually at 50 W. Vaughn Ave. in downtown Gilbert, according to a recent liquor license approval. Owners Linsay and Neil Smith have confirmed this location and says they hope to open by January 2022.

Gypsy Cup has made a wave throughout Phoenix for the last few years as a traveling café, popping up at festivals, markets, local events, and weddings. They have a stylish trailer outfitted with a full-service coffee bar serving espresso, coffee, and eight taps that rotate cold brews, nitros, lemonades, teas, and kombuchas.

The new storefront will expand the Gypsy Cup line from coffee to also include cocktails, grab-and-go bites, bottled, and canned beverages. They also have plans to incorporate pastries, light bites, and other delicious noshes. The 2,800 square-foot space will also feature expert design, curated art, and small gifts to purchase.

The concept is the brainchild of co-owner Linsay Smith, who combined her passion for coffee, tiny homes, and design and created Gypsy Cup. The Smiths strive to become a leader within Phoenix’s coffee culture, and they are well on their way to accomplishing this with the establishment of their flagship location.

“We’re really excited to be a part of downtown Gilbert. We hope to offer the community something different with our elevated beverage experience,” Linsay says. Gypsy Cup will be in Suite 106 in the Heritage District, which is thriving with restaurants, shopping, arts, and downtown events.
