Entrepreneurs Daryl and Zackary Edson are an uncle and nephew team who will pair up to offer their respective Phoenix neighborhoods a healthy choice in Koibito Poké this summer, they confirmed to What Now Phoenix over email.
The two new poké spots are part of the company’s latest plan to add seven new locations across their markets; outside of their most significant market in Arizona, Koibito Poké will also add to their healthy and fast casual locations in St. Louis, Missouri, Charlotte, North Carolina, and Las Vegas, Nevada, according to reporting in QSR Magazine.
Daryl Edson will head the Gilbert location at 875 S. Gilbert Road Suite 100, telling What Now Phoenix over email that he wants to offer an alternative to fast food, “leaving people satisfied without feeling weighed down….Being part of a company that promotes healthy lifestyles beginning with nutrition has been an incredible experience that I am grateful to be a part of.”
Fellow owner Zackary Edson is also very excited to start work in the community near 3870 W Happy Valley Rd. Suite 159 in Glendale. “We chose this location for our Koibito Poké restaurant because of its central location within the community and its accessibility to a diverse range of customers,” Edson elaborated to What Now Phoenix. “The area has a growing food culture, and our restaurant aims to cater to health-conscious individuals and provide them with a fresh and delicious option for a quick and nutritious meal.
They’re both optimistic that their communities will flock to Koibito Poké’s incredible menu. Zackary Edson also adds that “By offering locally sourced ingredients and sustainable packaging options, we also aim to support the community and its values. We believe that our commitment to quality and the community will help establish Koibito Poke as a beloved and trusted brand in the neighborhood.”
The Gilbert location is projected to open in June 2023, which Stetson Hills plans for either June or July 2023.
