Largest Thirsty Lion Gastropub Heads to Glendale

Concept Entertainment Group, which relocated its headquarters from Oregon to Scottsdale just last year, will open its largest Thirsty Lion Gastropub by the end of 2022.

A fifth Thirsty Lion Gastropub is expected to open in Glendale by the end of next year, reports Phoenix Business Journal. The eatery, which will be the brand’s largest, will open in a 9,800 square-foot two-story site next to the Westgate Entertainment District; an exact address has not been announced. The project includes a patio with bar on the eatery’s second floor.

CEO of Concept Entertainment Group John Plew told Phoenix Business Journal the fifth Arizona location will create around 100 jobs and cost almost $5 million to develop. Plew suspects the Glendale location will outperform even Tempe’s Thirsty Lion, which is the brand’s highest volume store in the Valley. Plew also plans to operate virtual/online-ordering concepts out of the new location’s kitchen.

Thirsty Lion offers an upscale take on sports bar fare. The menu boasts craft cocktails, hearty burgers, and “Kitchen Specialties” like Baja Fish Tacos, Kung Pao Chicken, and Grilled Ribeye Steak. The eatery aims to provide a “wide-variety of hand-crafted food with an emphasis on local ingredients, bold flavors, scratch recipes, and seasonal plates.” Locations can be found in Oregon, Texas, and Colorado as well.
