Don Fitos Taqueria, the eatery and food truck that stations two days a week in Mesa and three days a week in Gilbert, boasts “the best carne asada in town.” And on Tuesdays, you can get your hands on them for $2.50 a pop. What’s more, the taco joint even serves up keto tacos, which have the seal of approval from none other than Instagrammer & Blogger, Tony McDermott, A.K.A. keto_dad_AZ.

So why is this news? Well, it appears the late night taco stand will put a more permanent roof over its head on S Power Road, not far from their Mesa food truck location. The eatery recently filed a permit application for 1845 S Power Road. According to the application, the tenant, Don Fitos, will embark on improvements to an existing restaurant in the form of adding a pass-through window in an existing wall, removing a hand-wash sink, and adding a floor drain.

We were unable to reach the owners at the time of publication, so you’ll want to follow the food truck on social media for updates. In the meantime, Don Fitos can currently be found parked at on S Power Road in Mesa on Wednesdays and Thursdays from 5PM to 11PM and on W Guadalupe Road Tuesdays, Fridays, and Saturdays from 5PM to 2:30AM.
