The new restaurant is the result of a partnership with Capital Asset Management, according to AZ Big Media. Pita Jungle’s creative team, led by Bassel Osmani, Fouad Khodr, and Nelly Kohsok, will use the partnership to open Feta Cowboy, described as an inspiring blend of Mediterranean flavors and Southwestern flair. This concept will offer a fresh, fast-casual experience that redefines expectations. Feta Cowboy is expected to open in Spring 2025.

“As long-time admirers of the team’s success with Pita Jungle and their innovative approach to dining, we couldn’t be more delighted to play a role in helping this bold concept take root in our community,” Rachelle Strole, owner of Capital Asset Management, tells AZ Big Media. “This partnership marks an exciting chapter for Capital Asset Management as we continue to invest in innovative and impactful ventures that elevate our community. Feta Cowboy is more than just a restaurant, it’s a reflection of the rich cultural diversity and entrepreneurial spirit that define our region.”

The team behind Pita Jungle has been developing this concept for quite some time now. The new fast-casual chef-driven concept will feature fresh ingredients, big portions, small prices, and quality service. This is a massive accomplishment for the owners of Pita Jungle, which started in Tempe in the early ’90s and has grown to more than 20 locations in the Valley and restaurants in Flagstaff and Tucson. Unlike Pita Jungle, which has locations secured through leases, the owners hope to own the land that Feta Cowboy sits on.
