This is just one of many new eateries coming to the Village at Prasada later this year, including Barrio Queen, Blue Sushi Sake Grill, Buffalo Wilds Wings, Chick-fil-A, and a lot more. While the shopping center’s website notes Burros & Fries opening in December 2023, owner Fernando Ruiz tells What Now Phoenix he plans to open much sooner, likely in May 2023. This will be the company’s second location within Arizona and 13th overall, following the company’s Arizona debut in Glendale. All other locations are within San Diego County.

When Burros & Fries opens in a few months, customers can expect classic Mexican dishes, including breakfast burritos, bowls, tortas, burritos, tacos, and more. This restaurant will likely become the primary spot within the Village at Prasada to get authentic Mexican food, only having to compete with Taco Bell, which is already open. Other eateries already open at this shopping center include Arby’s, Jersey Mike’s, and Nekter Juice Bar. While this Burros & Fries will be a corporate-owned location, the company seeks franchisees to expand the business further.

“I was raised learning about the restaurant business since I was ten years old,” according to the company’s website. “My father opened his first Taco Shop in 1974 in San Diego! He taught me all that I know. I came up with my new idea in opening my own brand: Burros & Fries fresh Mexican grill! I opened my first restaurant in 2009 in Tijuana, Mexico. Now we have crossed the border, opening new locations across San Diego. It has been a great experience growing my business, thanks to all my wonderful customers! Hope you enjoy all that my father has taught me.”
