The culinary landscape at The Scottsdale Resort & Spa, a Curio Collection Resort by Hilton is undergoing a transformation alongside its nearly completed $40 million property-wide renovation, and the resort announced the opening of four distinct dining concepts.

From Sonoran cuisine with global influences and a health-focused café to a hidden speakeasy and a family-friendly lounge with interactive games, The Scottsdale Resort & Spa is evolving beyond its 50-year legacy as a conference resort into a full-service retreat.

“Our culinary reemergence is a celebration of a collection of fresh new concepts curated for seamless dining experiences for every occasion,” said longtime Valley Chef Ken Arneson, the area executive chef for Driftwood Hospitality who is leading the resort’s culinary evolution in a statement. “From a sunset dinner at La Fogata, to the hidden charm of The Madam and the all-day allure of Barnaby’s, this is now a culinary destination for all.”

Open to the public, the resort’s four brand-new restaurants include:

La Fogata
(Monday Through Sunday, 7 a.m. to 10 p.m.)
Situated against the backdrop of panoramic vistas of the McCormick Ranch Golf Club and Camelback Mountain, La Fogata invites guests to delve into modern Sonoran cuisine. Open for breakfast, lunch, happy hour and dinner, La Fogata’s menu is crafted utilizing locally sourced ingredients, including guajillo chiles, white beans, meats and seasonal produce. The menu has a variety of dishes such as the Beef Carpaccio ($21) with seared A5 Wagyu, horseradish caper aioli, pickled frisee, Manchego cheese, heirloom tomato and radish; House Made Mole Meatballs ($12) with cotija cheese, pea shoots, carrot slaw and fresh flour tortillas; Meat and Potatoes ($29) with handmade gnocchi, browned butter, fresh herbs, braised oxtails, roasted mushrooms and black truffle pecorino; Chilean Sea Bass ($38) with sweet coconut forbidden rice, khao soil curry, wilted arugula and sunny-side-up egg; and the Soup & Sando ($17) a tomato and tarragon bisque and a bacon three-cheese grilled sandwich, a nod to the resort’s original menu.

The Madam
(Wednesday Through Saturday, 4 p.m. to midnight)
The Madam, a speakeasy reminiscent of the Roaring Twenties and the prohibition era, invites guests on a clandestine journey where classic cocktails meet modern creations such as the Shot To Your Heart ($20) with Dos Hombres Mezcal, Gran Ponche, coconut water, lemon juice, pomegranate compote, agave and egg white, or the Word of Mouth ($18) with High West Double Rye, Celaya Reposado, Aperol, lemon juice, ginger, Demerara sugar and Laguvulin Spritz. Upon check-in, guests receive a secret password, ensuring an exclusive entry into this intimate space. For non-guests, acquiring the password becomes a delightful task, requiring interaction with the attentive staff or the resort’s social media pages to find out where The Madam keeps a watchful eye.

The Social Boardroom
(Wednesday Through Saturday, 4 p.m. to midnight)
Adjacent to The Madam, The Social Boardroom offers a casual lounge-style atmosphere. This space invites guests to unwind with various entertainment options, including pool, shuffleboard, board games and a golf simulator. Bartenders and servers serve an array of cocktails and casual small bites, including sliders, naked wings with dipping sauces, nachos and more. The Social Boardroom is also available for private group rentals with advance reservations.

Barnaby’s Café + Wine Bar
(Monday through Sunday, 6 a.m. to 8 p.m.)
Barnaby’s Café + Wine Bar has a curated collection of grab-and-go options. The morning hours welcome guests with a coffee bar and a selection of fresh pastries, breakfast sandwiches featuring meats from the in-house butcher, vegan items from Noble Bread and a variety of teas, espressos and coffee blends utilizing local coffee from Roastery of Cave Creek – ROC2. Throughout the day, Barnaby’s transitions into a fast-casual lunch spot with paninis and salads. As the sun begins to retire for the evening, Barnaby’s Wine Bar comes alive, featuring Arizona and regional wines to be enjoyed within the café or out in the Spanish-style courtyard. Local artisans are celebrated with an array of retail products, including Laura’s Gourmet Granola, Cutino Sauce Co., Cerreta Candy Company and Roastery of Cave Creek – ROC2.
