Now the restaurant is already making moves for a second location, this time in Gilbert, where they are taking over the former Waldo’s BBQ at 1524 E. Williams Field Road. Chef and owner Jorge Gomez confirms that renovations will take a couple months, so we can expect Humble Bistro Gilbert to open early next year.

Gomez says that much of their plans for the new location are still top secret, but he did divulge that customers can expect the same great menu that exists on High Street. The Gilbert location will be slightly bigger, but it will also have the same ambiance that gives Humble Bistro its current reputation.

Until we find out what surprises Gomez has in store for Gilbert, we can get a taste of what to expect at the original restaurant in North Phoenix. Stay tuned to their website and follow them on Instagram and Facebook for updates.
