Co-owners Bob and Mary Wilson, along with their son, Wyatt Wilson, who will serve as the company’s brewmaster, plan to open the new taproom in Fall 2023, according to the Mouth by Southwest. The current plan is for construction to be completed in August, with a target opening date of September. Customers can expect a global variety of true-to-style craft brews in a chill indoor/outdoor tap room. The 4,200-square-foot brewery will feature a 2,500-square-foot patio, a 10-barrel brewing system, and a full kitchen.

Wyatt has an extensive history of working in the industry, having experience with Dust Bowl Brewing Company in California, Mash Lab Brewing in Windsor, Colorado, and Monkless Belgian Ales in Oregon. On top of working for award-winning craft breweries, Wyatt has also developed his own interpretations of classic Czech, German, Belgian, English, and other regional brews. The company’s brewmaster also graduated from Olds College’s Brewmaster & Brewery Operations Management program in Alberta, Canada. His parents recently moved to the Valley from Hawaii about a year ago, and they decided it was time to open a brewery.

“Pinnacle Brewing Company is a family business that was conceived on a backdoor patio in 2017,” according to the company’s website. “Wyatt was playing beer pong with his friends with beer that he brewed in the family kitchen while his parents, Bob and Mary, were sketching out their retirement plans. Four years later, Wyatt was an accredited Brewmaster, and the three of us drew up the plan that resulted in Pinnacle.”
