The Valley’s own Koibito Poke announced yesterday an exciting new deal that leads to their national expansion. Signing a franchise sales agreement with True Capital Partners LLC, Koibito Poke now anticipates opening at least 300 more stores across the U.S.

Koibito Poke was founded in Scottsdale by former Toronto Blue Jays pitcher Todd Stottlemyre, who grew Koibito Poke’s presence throughout the Valley by opening three more stores in Arcadia, Gainey Village, and The Plant in Chandler.

True Capital Partners LLC is one of the most successful franchise development firms in the industry. After successfully opening 160 new stores for a fast-casual dessert concept, True Capital turned its focus into the fast-growing poke dining space and luckily found promising collaboration with Koibito Poke.

True Capital spokesperson Adam Daniel adds, “Our team had been searching for a dining concept that has dealt with the three huge barriers that are devastating the restaurant industry today: labor shortages, food cost inflation and rent. Koibito provided the perfect solution to all those barriers of entry and so we immediately committed our resources into development and are looking forward to massive success with Todd and his team.”

Based on their development schedule, True Capital plans to open the first 120 stores within the next 30 months. Eight states including North Carolina, South Carolina, Georgia, Florida, Texas, California, Idaho, and Washington are on the roster for Koibito’s expansion.
