During a Gilbert city planning meeting that took place Nov 2, the Scottsdale-based healthy quick-service restaurant, Original ChopShop, was named as a potential tenant for a new mixed-use development at 3877 S Quartz St, dubbed The Gilmore, according to a recent article in the East Valley Tribune.

If that deal were to go through, it would join another eight locations spread throughout the Valley in Scottsdale, Tempe, Phoenix, Chandler, and Queen Creek, as well as upcoming locations in Mesa and slightly further afield in Tucson.

Since its founding in 2013, Original ChopShop has been on a mission to help folks eat well “on a consistent basis,” working to “provide a warm, welcoming place full of energetic people where you can fuel your well-being,” as the company writes on its website.

“We threaded Original ChopShop together with bits and pieces of our hearts – and we think that food should not only taste good, but should make you feel good, too.”
