Poolboy Taco, the long-anticipated restaurant from Poolhouse Group, is getting ready to open in Midtown, located at 3112 N. Central Ave. Suite 102.

While news of this came back in 2021, along with the group’s other restaurant, The Green Woodpecker, it was early in development. Now co-owners Aaron and Jared Pool, the brothers behind Gadzooks, are hoping to open Pooloby Taco in Summer 2023, according to AZ Central. The restaurant won’t have any inside seats, instead relying on its large outdoor patio. The Green Woodpecker beer bar opened at Park Central Mall last December. The Pools hope Poolboy Taco will encourage speedy service with a smaller footprint while offering quality eats. 

The brothers’ success stems from enchiladas and soups at Gadzooks, which celebrates if 10th anniversary this month. The company already has locations in Phoenix, Tempe, and Chandler, as well as two stands within Chase Field, and is getting closer to opening a fifth brick-and-mortar at Epicenter in Gilbert, hopefully by late Spring 2023. On top of this, Pooldisco, the company’s distribution and central kitchen, operates out of Mama Linda’s Bakeshop, their mother store in central Phoenix.

The brothers launched the hospitality group to manage all three restaurant concepts under one roof. While Poolhouse Group is owned and operated by the two brothers, they take any and all the help they can get from their family. Their mother, Linda, still plays a role in many operations, while their brother-in-law, Drew, who worked at Wren House Brewing Company, is responsible for the Green Woodpecker’s craft beer selection. The family-owned company plans to do the same for Poolboy Taco.
