Pitmasters, Kyle Matuszewski and Justin Coffini, will double down on their award-winning 'smoke-fried' chicken wings at Birds & Bones when it opens next year.

The pitmasters from Your Behind BBQ, Kyle Matuszewski and Justin Coffini, are opening a new concept officially dubbed Your Behind BBQ – Birds and Bones at 270 N Main St in Florence, sometime around late February or early March, according to Matuszewski.

“Florence is a small town and it’s a growing town, and we had the opportunity to buy a restaurant right on Main Street, and we want to be there to help expand Florence,” Matuszewski tells What Now Phoenix. “Hopefully more restaurants will follow us, and we can start building that town back out, and get it going again.”

If anyone is capable of bringing a town back to life, it’s this award-winning duo, who’ve not only dominated numerous competitions around the country but also appeared on various Food Network shows, including one that’s due to premiere in July and follows the pair as they participate at the American Royal barbecue contest in Kansas City. (Spoiler alert: they place an impressive fourth out of roughly 293 teams.)

As for Birds and Bones itself, Matuszewski says it won’t be a “traditional barbecue restaurant,” and that they’ll concentrate on their signature chicken wings – smoked over hickory and then deep-fried to a crisp – with various sauces, as well as chicken sandwiches, their “competition-style” ribs, plenty of sides, and a weekly special such as pulled pork sandwiches and brisket sliders, all of which will be complemented by a full bar. 

“We’re excited to jump into this next chapter,” says Matuszewski, “and go into a restaurant.”
