Bottled Blonde to Take Up Residence in Gilbert’s Heritage District

The company will be building a 'soaring two-story space’ complete with dining areas, a rooftop patio, and beer garden on the former home of Bergies Coffee Roast House.

Scottsdale-based hospitality venture, Evening Entertainment Group, is bringing its pizzeria-turned-nightclub concept Bottled Blonde to 309 N Gilbert Rd in downtown Gilbert’s Heritage District in 2025, according to a recent article in Phoenix New Times.

“We’re honored to bring Bottled Blonde to the East Valley and have been looking for just the right space in downtown Gilbert for several years now,” Les Corieri, who owns and operates Evening Entertainment Group’s portfolio with wife Diane Corieri, said in a press release. “We love what Joe Johnston has pioneered out here, and are looking forward to joining other incredible operators like Upward Projects and Fox Restaurant Concepts to continue leveling up the East Valley experience.”

Incidentally, the Corieris quite literally plan on leveling up the experience, as they plan to construct a “soaring, custom-built two-story space” that will house dining areas, a rooftop patio, and beer garden on land formerly occupied by Bergies Coffee Roast House.

In addition to its flagship Scottsdale location, Bottled Blonde also has outposts in Dallas, Houston, Miami, and Forth Worth, with Las Vegas and Nashville coming soon.

While the restaurant serves as a “casual neighborhood Italian eatery” and sports bar by day, serving up a reliable slate of antipasto, pizza, sandwiches, and salads alongside a modern German bier garden ambiance and beverage program, by night it transforms into a Vegas-style nightclub of pulsating beats, state-of-the-art lights, table service, and more.
